Kombucha is produced by a SCOBY, a symbiotic culture of bacterial yeast that is the result of fermenting tea.
Fermentation occurs when the sugar in your base tea, is converted from sucrose into fructose and glucose, and then into gluconic and acetic acids.
Gluconic acid, naturally occurs in fruit and honey as an acidity regulator
Acetic acid, main component of vinegar
Enzymes are a big part of why kombucha is so good for you and most importantly, your gut health, as they work together to break down food efficiently.
Some digestive enzymes come from the pancreas, stomach, and salivary and small intestinal glands. Raw food contains substantial natural enzymes to ease regulate and ease digestion, but more refined foods you consume, the more your body must produce these enzymes on their own.
